How to Make Veg Thukpa Soup | Veg Thukpa Soup Recipe
Ingredients of Veg Thukpa Soup
1 cup boiled noodles
4 cups vegetable stock
2 tablespoons olive oil
1 tablespoon grated ginger
1 tablespoon minced garlic
1 onion chopped (medium size)
4 tablespoons grated carrot
3 tbsp chopped capsicum
1 tomato chopped (medium size)
3 tablespoons ground beans
3 tablespoons red bell pepper flakes
1/4 cup chopped soybeans (It should be boiled in advance)
Salt to taste
1 teaspoon of pepper powder
Chopped raw chilli to taste
1 tablespoon lemon juice
Chop coriander as required
How to Make Veg Thukpa Soup
1. Heat oil in a pan and fry ginger and garlic cloves well.
2. Now boil and chop the soybeans and fry them well. Now fry it with onion.
3. When the onion becomes soft, mix well with carrots, green chillies, beans, capsicum, tomatoes and fry for 4-5 minutes. Add salt at this stage.
4. Now cover with vegetable stock and cook for 5 minutes. Mix well with lemon juice.
5. Now put the pre-boiled noodles in a serving bowl and pour the prepared vegetable soup over it.
6. Garnish with coriander leaves on top and serve hot.
